Title: Curried Pineapple Rice

1cn(14 oz.) clear chicken
  Broth
3/4cWater
2tbShoyu
1/2tsLime peel -- grated
1/2tsTabasco sauce
2tbButter
1tbGinger -- grated
1 1/2cRaw rice
1tbCurry powder
1/4cRaisins
1cn(8 oz.) crushed pineapple
1/2cMinced green onions
1/3cMinced red bell pepper
1/3cToasted slivered almonds

Combine first 6 ingredients. Set aside. In saucepan over medium heat, add butter and ginger and cook for 1 minute, stirring constantly. Stir in rice and curry. Cook 3 minutes or until rice is lightly browned, stirring often. Stir in raisins and broth. Heat to boiling. Reduce heat to low. Cover, simmer 20 minutes or until rice is tender. Stir in pineapple, green onions, red pepper and almonds. Let stand 5 minutes.
